3 1/2 cups grated carrots
1 cup buttermilk
2 1/2 cups all purpose flour
1 cup while wheat flour
1 tbsp baking powder
1 tbsp cinamon
2 tsp ground ginger
1 3/4 tsp salt
1 tsp baking soda
1 tsp ground cloves
1 tsp allspice
1 tsp nutmeg
2 cups brown sugar
1 cup granulated sugar
4 eggs
1 tbsp vanilla extract
1 cup vegetable oil
Bake 350° F/ 180° C for 25 mins

an easy solution for your flour issue would be to just use grams. Which is recomended anyways in baking since it's a lot more accurate than cups
I was gonna say the exact same thing. It is a foolproof way to get the ingredient measurements accurately.

do you know how much grams are in this cups?
A cup of flour is 130 grams. It also says so on the video at 2:28 (129 grams)

I made this cake for my mom for Mother’s Day, and it was the best carrot cake she ever had. I’m not even that big of a fan of carrot cake, but my friends and I LOVED it! It’s so moist and soft, and the icing was so creamy and not too sweet. Amazing recipe! 10/10
Best carrot cake I ate in my life was in Azerbaijan. I went for 2 weeks and found a coffee house called (the house café) in Baku. OMG , still dreaming of their carrot cake. I will travel to Baku someday just to eat it again. If you go to Baku, you have to try it.
Based on real life experience even if you go there again you won't get the same taste again. Cause I have noticed it several times.

- 16 oz cream cheese

- 3 cups powdered sugar

I've never used other liquids than eggs and oil and I've never had a dry carrot cake. I also only use baking soda and I incorporate the carrots by hand in the end. I also bake it on 190 C or 374 F for an hour (put a baking sheet over after 20 minutes). I also use lemon in my cream cheese frosting and a little salt, hands down the best frosting ever! I have no idea the measurements on the frosting because I do it by taste.

I will try your version this weekend. Only main difference, I will frost the sides. My wife has a great sweet tooth and loves cream cheese frosting on many things like cinnamon rolls and even alone on graham crackers. She also loves the pecan and coconut frosting used on German chocolate cakes on many things.
A similar cake my mother use to make substituted the carrots for zucchini! Its like zucchini bread but better!
Also my mother mixed in finally chopped pineapple for extra juiciness.

Carrots are healthy is my go to line just bake carrot cake and eat it all by myself. I use almond flour and also create a meringue and then I add the dry ingredients with the yolk and vegetable oil. It makes it fluffy. I don’t use milk

I’d recommend you try Sally’s Baking Addiction’s carrot cake recipe. It’s just so good and easy, I don’t think any other recipe could be better.
