I made this cake for my mom for Mother’s Day, and it was the best carrot cake she ever had. I’m not even that big of a fan of carrot cake, but my friends and I LOVED it! It’s so moist and soft, and the icing was so creamy and not too sweet. Amazing recipe! 10/10

I also bake it on 190 C or 374 F for an hour (put a baking sheet over after 20 minutes). I also use lemon in my cream cheese frosting and a little salt, hands down the best frosting ever! I have no idea the measurements on the frosting because I do it by taste.
Carrots are healthy is my go to line just bake carrot cake and eat it all by myself. I use almond flour and also create a meringue and then I add the dry ingredients with the yolk and vegetable oil. It makes it fluffy. I don’t use milk

Will try using your method to combine the ingredients. This recipe has you place all the dry ingredients in mixer, add oil (I added it all at once), then eggs one by one and finally stir in carrots. I think there was just not enough air in there. My eggs were also taken out of the fridge maybe 10 minutes before I used them so perhaps that prevented the cake being airy. Itbis frustrating as it looked nice, the flavour was good bit the consistency was horrible, almost like uncooked.
I will try your version this weekend. Only main difference, I will frost the sides. My wife has a great sweet tooth and loves cream cheese frosting on many things like cinnamon rolls and even alone on graham crackers. She also loves the pecan and coconut frosting used on German chocolate cakes on many things. A similar cake my mother use to make substituted the carrots for zucchini! Its like zucchini bread but better! Also my mother mixed in finally chopped pineapple for extra juiciness.

Stop saying olive oil doesn't work in cakes....olive oil is incredible in a carrot or chocolate cake. It doesn't overpower it. It gives it a beautiful fruity undertone.

an easy solution for your flour issue would be to just use grams. Which is recomended anyways in baking since it's a lot more accurate than cups
